Low-calorie, low-fat sponge cake.
Sometimes one just comes upon a recipe that is so amazing it needs to be shared with the entire world. I’m not going to lie, I wish I were a food blogger, but I just don’t have the time/calorie allowance/energy. Instead, I just occasionally post the most amazing recipes on Tumblr because I’m lovely.
Anyway, this cake is the most amazing thing I have ever encountered during my travels on the interwebz. It’s wonderfully moist and light and actually tastes like a cake, unlike my disastrous attempt at low-calorie blueberry muffins that my dog wouldn’t even eat. Also it’s easy and doesn’t use any random ingredients that you need to drive to an Indian supermarket on the other side of town for, which is always a good point. BUT, the best is yet to come. Guess how many calories are in one slice of this amazingness. 200? 150? Nope. 55 CALORIES PER SLICE. No, I’m not joking. The entire cake has 480 calories in eat, so seriously eat the whole thing. Go ahead.
What you need (makes 1 cake):
- 3 eggs
- 1 pinch of salt
- 1/2 cup sweetener
- 1/2 cup cornflour
- 2 tsp flour
- 1 tsp baking powder
- 1/2 tsp strawberry essence (optional)
What to do:
- Separate eggs, then beat whites and salt until almost stiff.
- Add sweetener gradually, beating until still peaks form and sweetener is dissolved. Add egg yolks and beat until combined.
- In a separate bowl, sift together corn flour, baking powder and flour, then fold into the egg mixture. Now add the strawberry essence and gently mix in, if using.
- Pour into a greased and lined 20cm (8-inch) cake tin, then place into the oven at 190 degrees for 15-20 minutes or until cake springs back lightly when touched. Don’t worry if the cake smells eggy at this point, it still tastes amazing!
- Leave in cake tin for 10 minutes before turning onto a wire rack. The cake may sink a little bit during this time, but don’t stress.
- Cut into 8 slices and eat! It’s amazing with low-fat vanilla ice cream, or just by itself.

Notes:
I’m sure you could add some cocoa powder to this to make it a chocolate sponge. Or add any flavour essence you like, not just strawberry. :)
